Bracken starch is a starch extracted from the rhizomes of wild fern plants. It is made by directly washing, crushing, filtering, and drying the roots of the fern plants.
Blanch until soft, then rinse with cold water (to achieve a chewy texture), and drain.
Slice the red chili peppers. Slice the pickled wild mountain chili peppers (available in supermarkets). Crush and chop the garlic, then add it to vinegar, followed by a little soy sauce, an appropriate amount of salt, a small spoonful of sugar, and some brine from the pickled chili peppers. Stir well. Add the chili peppers and minced garlic to the sauce and mix.
Pour the sauce from step 2 into the bracken starch from step 1 and stir.
