Vermicelli (fěnsi) is a common food in China. They are noodles made from mung bean starch, sweet potato starch, and other ingredients. They are usually referred to as fěntiáo sī, dōngfěn (mainly in Taiwan), chūnyǔ in Japan, tángmiàn on the Korean Peninsula, and miàn in Vietnam. The highest quality vermicelli is made from mung beans. They can also be made from corn starch or sweet potato starch, but the quality is not as good as mung bean vermicelli because mung beans contain the most amylose starch, which makes them less likely to become mushy when cooked and results in a smoother texture.

Vermicelli (fěnsi) is a common food in China. They are a type of noodle made from mung bean starch, sweet potato starch, and other ingredients, hence the name. They are also known as vermicelli strips (fěntiáo sī), dongfen (dōngfěn) (mainly in Taiwan), harusame (chūnyǔ) (in Japan), tangmian (tángmiàn) (on the Korean Peninsula), and mien (miàn) (in Vietnam). The best vermicelli is made from mung beans. They can also be made from corn starch or sweet potato starch, but the quality is not as good as mung bean vermicelli because mung beans contain the most amylose starch, which makes them less prone to gelatinization during cooking and gives a smoother texture. They are similar to thin noodles and are sold in a dried state. It is best to soak them in water before eating to soften them. The diameter of vermicelli is usually about 0.5 millimeters, which is the origin of the "silk (sī)" in their name.

Chinese food culture encompasses the development and utilization of food sources, the use and innovation of tableware, food production and consumption, catering services and hospitality, the operation and management of the food and beverage industry, as well as the relationships between diet and national stability and prosperity, diet and literature and arts, and diet and life. It is vast and profound. From a broader perspective, Chinese food culture can be classified from various angles, including era and technology, region and economy, ethnicity and religion, food and tableware, consumption and level, customs and functions, showcasing diverse cultural tastes, demonstrating different practical values, and presenting a vibrant and colorful scene. Simply put, it is the act of filling the stomach—"eating." In its most primitive form, it only satisfies the most basic physiological needs of humans.
